What we learned this week from Kim Campbell during our Wisdom Walk

As a recognized authority on the benefits of a plant-based lifestyle, Dr. Frank Sabatino has cared for and inspired thousands of people for over 40 years. Dr. Sabatino has a PhD in cell biology and neuroendocrinology and has done extensive landmark research on calorie restriction, stress, and aging. He currently is on staff at the TrueNorth Health Foundation in Santa Rosa, CA, and serves as the Director of Health Education at the NHA.




We are grateful to the NHA for allowing us to use their podcasts exclusively for all of our Wisdom Walks.

 

Kim Campbell, the spouse of Nelson and daughter-in-law of T. Colin, is a renowned plant-based chef. She is passionate about making healthy, easy-to-prepare foods accessible to all. She stresses the importance of using easily obtainable ingredients, such as those found at her local Super Walmart. Kim also shares insights on essential kitchen tools and gadgets, highlighting the value of a well-equipped kitchen for an enjoyable cooking experience.



Kim Campbell is a highly accomplished individual in the field of plant-based nutrition and culinary arts. She is the author of three cookbooks: the PlantPure Comfort Food Cookbook, the PlantPure Nation Cookbook, and the PlantPure Kitchen Cookbook. These books showcase her expertise in creating delicious whole food plant-based recipes that are free from processed oils.


As the Director of Culinary Education at PlantPure Nation, Kim has made significant contributions to the organization. She has developed an extensive collection of recipes that promote the consumption of wholesome plant-based foods. Furthermore, Kim has played a crucial role in leading the development of one of the largest plant-based frozen entrée lines available in the market.




 

As we were walking and learning together yesterday during our Wisdom Walk, I managed to take a few notes and I would like to share a few of the ideas which impacted me in some way. I am not quoting anyone, I am paraphrasing what I heard during the interview - filtered by my own mitote of ideas and thoughts, not to mention sometimes it is not easy to walk, listen, learn and take notes all at the same time! This is what I remember hearing and what I felt to be important to my reality.




I must say that I was quit surprised to hear that Kim is not SOS-free and neither are her cookbooks. Her recipes contain salt and some sugar but no oil - recipes designed for those who are transitioning to a WFPB-SOS free lifestyle. Her approach focuses on getting as many people eating more plants and less junk - and as we all know the process can be a long and difficult one. Kim provides recipes which can help with that transition to clean living.

They spoke at length during the interview about the amazing work of Plant Pure Nation - and all it has to offer communities and individuals who are seeking better health. Beyond the movie itself, they offer meal packs and prepared plant based meals to help those who are transitioning to this lifestyle or are simply very busy and could use some help to remain focused and prepared with their nutrition.


 


I took plenty of notes and Kim shared some interesting ideas. I have shared just a few ideas which seem to have remained with me - in a good way!





  • We need to make things tastier for those who are new to plant based diets

  • As people begin to eat this way, their taste preferences will change for the better

  • Comfort foods are important and we can find ways to create them plant based

  • Affordability and Accessibility are crucial in getting people to make the transition

  • Start slowly and do not become overwhelmed with the all the changes

  • Key items for her kitchen: Food Processor, Nutribullet, Instant Pot and Good Knives

  • Her dream is to have an immersion program where people can live the lifestyle together and feel its benefits

  • Take the transition at your own speed and ability

  • Small changes can bring enormous benefits and those benefits will encourage people to continue to make better and better choices

  • Our health depends on mind/body balance - from good sleep to good food to good balance in all things
