Nutrition Corner - Psyllium
Psyllium, similarly to other soluble fibers, passes through the small intestine without being completely broken down or absorbed. Instead, it absorbs water and becomes a viscous compound that benefits constipation, diarrhea, blood sugar, blood pressure, cholesterol, and weight loss.


Nutrition Corner - Flax Seed
The estimated glycemic load of flaxseed is zero. Glycemic load takes into account the serving size of a given food or beverage to estimate its impact on your blood sugar. It is considered to be more helpful than just using the glycemic index for people who are choosing foods based on their effects on blood glucose.


Healing Recipes - Super Powered by Dehydrated Whole Plants - A Day of Power!
An exploration of nutrient dense foods ALL WHOLE PLANT and all chosen for their healing properties. The day begins (break-fast) by preparing the GIT for the nutrition to come with 1 teaspoon psyllium (ground) washed down with about 500ml (about a cup) of hydrating water. And what follows that is pure magic!

365 IN 365 - Lessons from Ötzi the Iceman
Researchers at the center for mummy studies in Bolzano, Italy (field trip, anyone?!) found that there were microbe species in Ötz’s GI tract that have been found in Mexican mummies, and are still present in people still pursuing traditional foodways, but that are missing in most of the developed world.


365 IN 365 - The Seed Catalogs Are Here!
If you are a gardener (sometimes even if you aren’t!) you’ll eventually find yourself on the mailing lists of the seed companies. The end of the holiday season usually coincides with the Arrival of the Seed Catalogs, which I put in capital letters because it has the gravitas of an annual ceremony.


Nutrition Corner - Chia Seed
Chia seeds are the tiny black seeds of the chia plant (Salvia hispanica L.). More than 80% of the carb content of chia seeds is in the form of fiber. A single ounce (28 grams) of chia seeds boasts 11 grams of fiber.

365 IN 365 - A Day of Tea
True tea is a shrub with glossy green leaves (Camellia sinensis), and only the new tips are harvested for tea - which means these tea bushes are constantly being pruned. Some of it is done by hand, some done by skimming a sort of vacuum clipper along the tops, supported on either side by a tea harvester.


Nutrition Corner - Lemons
A great source of vitamin C and fiber, lemons contain many plant compounds, minerals, and essential oils. These yellow fruits also have many potential health benefits. Eating lemons helps to lower your risk of heart disease, cancer, anemia and kidney stones.

Nutrition Corner - Oranges
Oranges contain phytonutrients that can lower your risk of cardiovascular disease. Moreover, they provide bone-strengthening calcium, along with potassium and B vitamins thiamin (B1) and folate (B9). Folate plays a role in metabolism.


365 IN 365 - Rare Treat
The fruit is sweet, similar in texture to a mango, reminiscent in flavor of a banana or other tropical fruits. The fruits are vaguely bean-shaped, ranging in size from crab apple to pear to mango. They look like stubby green bananas, and a bowl of pawpaws will perfume your kitchen with a sweet, floral fragrance. It seems like they should have a broad audience.


365 IN 365 - Will it Air Fry?!
Following my own advice to seek out grocery stores that I don’t habitually shop at, I went to one of the BIG supermarkets in town and went very slowly up and down the aisles, looking for new options. My glance landed on canned hominy, and without a clue what to do with it, I chucked it in the cart.

Nutrition Corner - Walnuts
Plant compounds in walnuts have been shown to reduce inflammation in the brain and improve thinking and memory. Walnuts contain about 65% fat by weight. Like other nuts, most of the calories in walnuts come from fat. This makes them an energy-dense, high-calorie food. However, even though walnuts are rich in fat and calories, studies indicate that they don’t increase obesity risk when replacing other foods in your diet.


365 IN 365 - Diversity: Seasonal or Stored?
There is an estimated 20,000 - 30,000 species of edible plants in the world, so regardless of what form you find them in - fresh, canned, frozen, pickled, dried, fermented - give them a taste. You might find a new favorite.

Goji berries are often called a superfood because they contain
chemical compounds called phytochemicals that are produced by
plants. Phytochemicals in goji berries include polysaccharides,
beta-carotene, and zeaxanthin.

And happily, for the purposes of getting plenty of plant diversity, there are multiple varieties of potato - blue ones, purple ones, white ones, yellow one, red ones - little, big, skinny, roly-poly. They say you can’t go home again, but I’ve gone home to potatoes. All hail the mighty spud!

Avocados are a source of key nutrients, including healthy fats and fiber. They also contain anti inflammatory and antioxidant compounds that help reduce heart disease risk.


365 IN 365 - The Other Seafood
There are as many as 145 varieties of edible seaweeds eaten around the world. 145! That’s nearly halfway to our goal of 365! Although it’s unlikely any of us are going to find access to 145 different species of seaweeds, it’s not too hard to get your hands on half a dozen or so very common varieties in their dried form.

Nutrition Corner - Cinnamon
Cinnamon has a ton of antioxidants, like polyphenols. These can help your body avoid oxidative damage. The antioxidants in cinnamon are so strong that it can sometimes be used as a natural food preservative. If you want to reduce your sugar intake without compromising flavor, cinnamon is a great ingredient.


365 IN 365 - What I’ve Added Lately, and Eating a Brand New Food
Going to the grocery store has become something of a scavenger hunt. Every time I reach for something I usually buy, I stop myself and look around to see if there’s something I can switch it out for. This week at the store I grabbed broccolini instead of broccoli, radicchio instead of red cabbage, and water chestnut instead of jicama.
