2 C Cucumber (diced)

1 C Spring Onion (chopped)

3" Turmeric Root (diced)

1/2 C Apple Cider Vinegar (up to 1 C if desired)

2 tsp Black Pepper


1 C Tomatina (diced)

1 C Pomegranate Seeds


  • Place chopped/diced Cucumbers, Spring Onion, Turmeric Root, ACV and Black Pepper in a dish and mix well - allow to sit for 30 minutes
  • Gently fold in the Pomegranate Seeds and diced Tomatinas
  • Store in an air-tight container in the refrigerator for up to three days


Note: Blend this recipe to create a tangy salsa dip which will keep (when stored in the refrigerator in an air-tight container for up to 15 days)
