The reading this week gave me credible answers to my decades-old question, “What could possibly cause my body to over-ride my natural fat thermostat and weight regulation from my hypothalamus to reach a weight of over 400 pounds?” The consumption of excess salt, as well as refined foods that caused insulin resistance and damage to my gut microbiome from yearly, excessive antibiotics prescriptions all played a role in causing my morbid obesity with many dangerous consequences. Eating a whole plant food diet and regular exercise are reversing those conditions and setting me free.

Colin Campbell Center for Nutrition Studies, Cornell University. She has taught for many years in Middle School, Elementary and College classrooms. During two years of concentrated study, effort and twenty-six weeks of training at True North Health Center in Santa Rosa, CA, Kathy was able to lose over 200 pounds using medically supervised water-only fasting and WFPB eating.
